Coya Taco

Our meal was sponsored but the thoughts and opinions are all mine.

Coya Taco is an authentic award-winning Mexican restaurant located in heart of Palm Beach Island at The Royal Poinciana. Their food is made with locally sourced ingredients that has been humanely harvested.

Kevin and I could easily taste the difference in their organically fresh made cuisine. I was thrilled to learn that their tortillas are made from scratch and their guacamole is prepared daily in-house.

We started our afternoon at Coyo Taco with fresh guacamole and homemade tortilla chips. This delicious guacamole appetizers is made up of hand smashed Hass avocado, cilantro and pico de gallo.

For Starters

We loved their twist on the old classic corn on the cob. It was made perfectly with chipotle aioli covered in cotija cheese.

While waiting on our taco’s we sipped on their fresh Tortilla Soup a roasted tomato and tomatillo broth served over crispy tortilla strips queso fresco, avocado, cilantro and crema.

The kids enjoyed the cheese quesadilla while Kevin and I enjoyed the Carne Asada Quesadilla: thinly sliced grilled beef, Mexican cheese blend and pico de gallo in a large flour tortilla.

Carne Asada Quesadilla

Their hand pressed corn tortillas tacos were some of the best tacos I’ve had in long time. There were so many options to choose from. My favorites were the Grouper Frito Taco (beer battered grouper) and Carnitas de Pati Taco (a michoacana style duck confit). We also tried their delicious Al Pastor Taco (marinated pork) and the Carne Asada Taco (char-grilled certified Angus Sirloin Steak). If you want to skip the meat, make sure you try their Hongos taco which is a vegetarian option made with seasonal mushrooms.

I’m sure the kids thought everything was delicious but when we asked what their favorite part of the afternoon was, they both said the popsicles. These weren’t just any popsicles but homemade Mexican ice popsicles from La Michoacana.

So if you’re looking for the perfect place to go out for a family lunch, Taco Tuesday or Ladies Night on a Thursday, Coyo Taco in Palm Beach has something for everyone.

Easter at The Royal Poinciana Plaza

We had such a fun time at The Royal Poinciana Plaza egg hunt. It was the best mix of elegance and fun. My Wee Royal indulged on yummy deserts and bubbly water while they enjoyed one on one time with the impeccably dressed Easter Bunny.

There were plenty treats for the adults to enjoy but the cold delicious cocktails made this one of our favorite Easter egg hunt of the season. We will definitely be there next year.

Boynton Harbor Marina

Boynton Beach is a city in Palm Beach County, Florida. This small, family friendly town has something for everyone. Recently we decided to visit the Boynton Harbor Marina. This marina is located ½ mile south of the Boynton Inlet. Since our family enjoys anything water related, this made the perfect day trip.

We visited on a Sunday afternoon and to our surprise parking at the marina was a breeze. They do offer valet parking but you can easily find self parking. Everything at the Boynton Harbor Marina is walking distance. The marina also provides clean public bathroom for those visiting.

The Boynton Harbor Marina is not only beautiful and clean but they offer many different water activities. You can rent jet-ski or go on a fishing charters. They also offer scuba diving, boat rentals, and more.

Not looking to get in water? That’s totally fine because there are two waterfront restaurants nearby. (Banana Boat Restaurant and Two Georges Waterfront Restaurant). Both restaurants are located at the marina. Being that both are on the water, it is the perfect place to order a drink, sit back, relax, and watch the countless yachts and boats pass by.

Our children had the best time at the marina watching countless boat and yacht pass by. They were even lucky enough to see manatees and feed seagulls from scraps the fisherman were throwing away. The marina also provides many secret path ways and places with a view. We felt perfectly safe and even found a place where we could allow the kids to play freely.

This marina embodies everything we love about South Florida. And with palm tree and boats everywhere, its the perfect place to take family pictures. (For fashion tips on how to look great as a busy mom, checkout my article here.)
